1 15 oz can black-eyed pease, rinsed and drained
3/4 cup chopped red bell pepper (1 large)
3/4 cup chopped green bell pepper (1 large)
1 medium white onion chopped
3-5 green onions, finely sliced
1/4 cup minced fresh parsley
2 oz jar of pimientos, drained
2 cloves garlic, minced
1 8 oz bottle fat free italian dressing (don't think it needs to be fat free)
1-2 bags tortilla chips (if you use fat free dressing, may as well use baked tostitos)
Combine first 8 ingredients in a large bowl. Pour salad dressing over mixture and stir gently to coat. Cover and refrigerate for 24 hours.
Serve with your favorite tortilla chips
This is like a salsa, only like a salsa from the midwest or something.
